Knowing the lifecycle from seed to salad has so many benefits, aside from having a personal harvest. “Kitchen gardens support native pollinators and promote sustainability by lowering your carbon footprint,” said Cory Morris, associate principal at landscape design firm Hoerr Schaudt in Chicago. “Gardening also offers mental and physical health benefits, including stress relief and exercise.”
